If I put the Ghost into valet/service mode when I get to the fitting garage, will the Ghost remember that when the old battery is disconnected? Or will I have to enter the PIN to start the engine when the new battery is connected?

Perhaps you can try it out? As in disconnect the battery for a while, reconnect, and see if it is still in valet mode?
I don't touch such things; I'm clueless. Anyway, I checked with my installer and he says the Ghost will remember the valet mode.
