What spacer size would I need on a s3 with alloys et40

Depends on how far out you want the wheels to sit. 5mm would take you back to the original offset of ET35

Well I really want to bring the wheels to the edge of the wheel arches because I've fitted my billy b8's and my h&r springs now so it would look a lot better

20mm then, although it also depends what width your wheels are.

225 so that's about 8inch

I meant the width of the Wheels, not the tyres. You can put 225's on 7.5J up to 8.5J and it will obviously make a difference to how they sit on the car.

I'd go with 15mm up front and 20mm at the rear if the rim widths are 8"
