if you have them fitted, they are either well worn and have lost their tension or just worn out.
you could try and retention them , maybe better to just get new one to be honest.
If they were missing before the garage fitted the new calipers then highly likely they never fitted new ones.
Eitherway variant wise, there will be some type of springs on there to keep the pads tight in the calipers.

Well, if they fitted a pair of new calipers ,pads etc , then the only reason for rattling pads will be the anti-rattle springs or lack of them.
But that said it won't be the first ive seen owners report they are missing.
Depends on what front calipers you have fitted but these are found on most B7 front calipers, well on a lot of Audi calipers.
some vary is design but the basic funtion is the same.
It is very easy to miss a small issue that may not be obvious without more in-depth checks, also replacing parts on a random , it maybe that basis does not allways work so you need to see how the engine is running in real-time based on actual and requested info, you won’t see these from outside...
