I’ll be doing exactly the same thing, but RS3 paddles onto our S3.

Looking on YouTube, remove the airbag and steering wheel controls will then let you at the fixings for the paddles. It should be a straight forward job......at least I’m hoping it is!!

The buttons on the wheel are clipped into the polished metal surround from the back To remove them it is necessary to remove the air bag and the complete polished metal section of the wheel. There are no hidden fixings etc and the metal section, complete with the buttons simply pulls out of the soft black centre section of the wheel. Believe me, it will be tight but just get your fingers down the hole where the air bag was work your way round the centre section a little at a time and when it starts to move you will be able to get your fingers under the outer edge of the three spokes to ease it out. There is nothing to break and once you get it out you will see the screws that hold the paddles in place.
