Yeah they really aren't all that expensive. Especially since GSF currently has 25% off discs, couple of brembo ones will set you back £60.
You could probably have the edge sanded down if you really wanted, though for £60 I'd be more inclined to just buy new discs.

If you have the base model it doesn't come with DIS sadly.
Do you have the LCD screen between the dials? If so then DIS can be added with not a lot of effort at all.
Wider tyres will have no effect on Odo/Speedo reading. It's only the circumference of the tyres that will affect this, ideally you will want to run a lower profile tyre with larger alloys so that your tyre circumference remains the same as it was before.
