Same - I wonder if the ECU needed to "catch up" with the driving style. I wouldn't have expected any wheel spin on a 4WD car...though quattro is somewhat part-time 4WD.
I'd guess that you had ESC in Sport mode rather than ESC OFF mode?
In Sport it won't engage the rear wheels until it detects the need, in ESC OFF with the gearbox in S it engages the rear wheels all the time, giving a better launch generally.
Must say, the farts do sound a bit farty to me, but then you'd have to compare it to a standard S3 doing the same runs on the same day as I have no idea what my car actually sounds like from the outside on upshift
