225 is fine on 7.5" wide rim

slightly lower profile (45% of 225 vs 45% of 235) but nothing you will notice!
 
225 shouldnt affect the speedo its the 45 profile that will affect it if you swapped to a higher/lower profile on the same size wheel, if you swapped from a 45/17 to a 45/18 you would affect the rolling radius which is why you would fit a 40/18 or 35/18 tyre to compensate the rolling radius !!

i run 225/45/17 on 8" wide rims !
 
But the "45" is a percentage of the width. So if your tyres are 225 the profile will be slightly less than 235 width tyres.

I think 225/45/17 is actually the standard tyre size on the b5 though isn't it? I'm sure I remember having this argument with scottb5 (a nice argument) because my b6 uses 235 as standard, but he said it was 225.

As above. I run a 225/40/18 on a 9.5j and even though that is a little stretched its still as safe. Fulken even state that in their fitting guidelines :D
