Hi, I put 7" veba screens into my A4 headrests i just mounted the plastic backing box threaded the cable through the headrest pole and removed the rear pannel on the seat,connected it to the control wires which i ran under the center console.

how did you get the back of the seats mate

On the A8 they just pull right off, but in two parts, the top of the seat back first followed by the base of the seat back. Not sure about any other models. The headrests are just clipped in and can be removed easily.
