I never get a low oil warning.

Not even when I full drain the oil out.
It used to, but I'm sure it's since I fitted Full DIS. Has anyone else found this?

Or is it a faulty sensor and a coincidence? Vagcom shows it's measuring the level.

Must be a faulty sensor. Mine def worked and was loud a few months ago as crapped my pants when it went off one morning.....my car seems to burn oil with the K&N panel filter which was why it went off due to being low but with original filter back in and all is fine but do the usual weekly check.

just a thought but you should never turn on the ignition without oil being present in the car
as this is what burns out the sensor
