How to change coolant thermostat?

I've suspected my car is staying in "warmup" mode as my drive to work is getting me 37mpg which is 90% 60mph dual carriageway / motorway. Trips around town with the engine temp seemingly normal Im getting 15mpg.

My friend plugged in a diag tool which tells lots of things including what temp the ECU is reading the coolant temp.

With an ambient temperature of 27C, doing 70+mph in 4th gear at around 3000rpm for 20 mins, the coolant temp reached just 74C. Idle revving the engine for 10 mins it reached 76C.
In contrast his wife's A4 reached 79C from cold in the half a mile from his house to mine.

Looking at the specs of thermostat for the 2.0d it should start opening at 82C and fully open at 89C, so I'm gonna try changing it.

Has any one done it before and can give me some tips?
I think it's located in the black housing behind the alternator.
 
I have one to change on my 2.0 A4 CGLC.....its at the back of the engine and is a complete housing. looks a pain
