Alloy help with sizes and offsets

Hi im looking to replace the alloys on my S3, i think the standard size is 18 x 7.5 with an offset of ET56 with 225/40 tyres is that correct ?

What offset would be best for 18 x 8 ? considering my car is lowered on H & R springs and i dont want any rubbing.

As the roads are a bit rough and bumpy and i want to keep everything intact, not bothered about keeping audi alloys as i might go aftermarket when i can decide on the look.
 
I'd also like to know what the stock numbers are.
 
Not sure yet, i want something thats a bit unique and wont rub or catch, i did think about standard alloys and getting them powder coated.
 
Ive got a 1.6fsi 3dr se. I want to get a set of new style RS6 wheels. Im just wondering if 19" will be ok after lowering around 30mm? Should I expect any rubbing or scrapping problems once I have afew passangers on bored etc? Also what ofset is best..
