I test drove a 2021 s3 with 42k miles on it and it drove smoothly with no visible smoke at 30-40mph in auto mode but when I went to accelerate hard in dynamic mode up to 70mph on slip road on to motorway there was lots of white smoke coming from the exhaust it covered most of the rear window, done another 20-70 pull few mins later and could see the white smoke again but not as bad as the first time.

Would this be a concern or could it just be from car not been driven in about a month or so ?

1st Oil service was done after 14 months at 14k miles
2nd oil service was another 22 months after the 1st at 32k miles
3rd oil service another 17 months after the 2nd at 40k miles

Is this too long between services and would this cause a concern in the long term ?

white smoke is usually water, if it is thick and lingering then it could well be coolant, if it is thin and disperses then most likely condensation inside the exhaust.

from your description I would suggest the latter, it should go away when everything is nice and hot but it is worth checking the coolant level.
