Engine warning light - need advice

Need a little bit of help/advice...

Engine warning lamp flashed up a wee while ago on my car dash with code P2681 - engine coolant valve stuck open/closed, it’s been super temperamental and has been going on and off randomly with no effect to the car whatsoever, power has been fine and air con and heating have been running fine. Engine has reached normal temperature in its usual time and stayed steady with no major increase or loss of temperature, the light has been really the only indicator something wasn’t right. No real loss of coolant either.

Then, today I got into car and went out and the warning light came on (wasn’t on yesterday), car took quite a bit longer to heat up and then once it hit around 90 degrees (ish), it started dropping rapidly whilst still driving heavy on motorway (went from 95 to 65 degrees in about 10 minutes). When I got home I noticed the engine fans were also on full pelt and were so loud. Fans shut off when I turned engine off but were going like the clappers when engine was running.

Any ideas what all this could be before I take it in somewhere to get diagnosed/fixed?
Have read into it but I’m currently getting pointed in about 5 different directions...
