I have two done two things to my two grills for my s3. First one i wrapped the silver lip in gloss black vinyl with the silver in situ and then masked off and sprayed the centre with plasti-dip which is what i am currently running.
The second one i bought a genuine S3 B/O grill and when it arrived the gloss black edge trim was not in the best condition, so i carefully removed the trim and then wrapped that which was far easier removed than in situ! I have put it all back together and it looks sweet. Not 100% but its not a brand new B/O grill.
Just havent got round to fitting it yet!

Could I plastidip the surround aswell as the grill? Or would wrapping be better? Also planning to plastidip the splitter

Unless you then put a layer of gloss on top of the plastidip, like so:
