If the temp doesn’t come up to around 90° after a short while then it does sound like a faulty thermostat. Likely stuck open.
Fuel use would be higher as the engine thinks it’s cold so is pushing a more fuel rich mixture into the engine.
I’m not sure what model/engine or age of car you have...

When I lock the car the led flashes rapidly around 4 times then stays constant for around 30 seconds (this it checking the interior space and doors I believe). Then it fully arms and goes to a flashing state.

The over the wire updates are for those with the hard drive Sat Nav that was part of the technology (plus) upgrade.
I would certainly be speaking to Audi.
Regardless of it being a used car, the work has some issues and they should honour the repair to make them to a suitable standard as it appears to be poor workmanship/quality.
