has anyone with a b7 Cab changed/removed the interior lights. After info on how to..

I think light assembly above windscreen simply pops out with screwdriver.

Replace with LED bulbs from usual source.

Same goes for the lights above sun visors. Piece of cake really.

Search should find info on footwell lights, but I don't have these.

Yes as above led festoon lights above sun visors , center light pop the round white plastic discs off there 501 s ,puddle lights door markers glove compartment and boot I used the flat leds that light on one side all interior leds don't throw errors up so nice and easy to upgrade to bright white ☺
 
This is the what the lights look like in my car. Am I correct in saying it just snaps out from the surround and snaps back in again. I can't see any hidden screws?

Looks slightly different on mine I have an 08 plate but the white discs should pop out careful not to scratch them though
 
So you prized the actual clear lenses out rather than the whole piece ?
 
Yes on mine they are opaque white you need a tiny screwdriver to prise one side good luck
