When I have issues with moisture in the car I put a tray of rice or salt in the passenger side foot well. Done this recently after washing my seats. Takes the moisture out of the air. I also bought a rechargeable dehumidifier like THIS, although I think the rice / salt works better.

Mine turned out to be the intercooler, just posting incase anyone stumbles across the thread looking for answers.

Turned out to be my intercooler. Replaced with 2nd hand one and right as rain :)

In about the engine today and the intercooler has split in two. Managed to get it out today and have ordered a replacement. Thanks again Ali
