The light (orange with picture of a car and skidmarks) will not normally be lit on the dash unless you activate the ESP by the wheels losing traction in which case it will start flashing whilst the system is trying to prevent the wheels spinning, and then it will go out once you regain traction.

The ESP is on by default everytime you start the car, and the light will not be lit.

In practice the wheels will still slip a bit with the ESP engaged, but nowhere near as much as when you turn it off.

Should the ESP light flash intermittently under braking where the ABS has kicked in?

Mine flashes when pulling away and its scrambling for traction and I'm sure it used to flash under heavy braking but noticed when coming home today, I braked hard in the snow, the ABS kicked in but the ESP light didnt flash... now im questioning whether it used to or not!

It may have been flashing before because the stability control was stopping the car going sideways under heavy braking.

It also tells you in the manual to turn it off in the snow.

Crazy, I turned mine off in the snow the other night leaving work for the hell of it - didn't boot it that hard, and the car drifted several feet across the car park! Now I leave it on...

much more fun in the snow with it off.. especially when used with a soft right foot and quick left hand :D
make sure you take care and be safe!
