Sportback Brake Oil

Hi everyone.
Decided to make a road trip around Germany this summer including the Green Hell.
Brakes and tyres already swapped and prepared.
But I’ll also like too do a proper complete brake oil swap, not the way Audi does it by sucking out whats in the canister. (Leaving the old unchanged oil still in the lines)

What brake oil do you guys recommend?
Also anything particular advice i need to know while doing it?

Anyone know how much fluid the complete system requires?

I believe it’s less than a litre. I think I used about 8/900 ml when I changed mine.
