My dashboard has a fair sized chunk missing out of the passenger side thanks to its previous owner, how complex would it be to replace the dashboard like for like?

Might be with getting a trim specialist to fill the hole/ repair it. There are some good people out there that do these especially when you remove phone cradles from dashed that have used self tapers in the dash.
 
Yeah removing dash is straight forward, bit it takes ages as everything has to be removed prior too, so its not a hard job overall, but it takes time for sure.

Dash

The car was previously owned by the Met Police, so I'm thinking this would have been the on-board computer. The dealer I bought it off tried to make it "better" by filling the hole with an Audi badge (One of the reason I got the car cheap).

Personally, it does my head it. Looks like a five year old had a pop at fixing it but I try not think about it. ;)

I think a replacement is going to be the way forward. I can see myself spending a Saturday taking it all to bit but to be honest, the only thing that worries me is what needs to be removed, in what order etc.

Anyone getting rid of a dash for a 2005 8P1 in good quality?

If a new dash is too expensive and a lot of work for you then you could look at getting it filled and then flocked.
