Well I have had a look on the forum but couldn't really find what I was looking for.

My car 2007 S3 8P.

My car came with factory Xenon lights, everytime I would turn on the lights the beam would point down, then back up again. However the otherday it stopped working and the beam just pointed down. I looked at both the levelling sensors and found the rear sensor to have seized and snapped. I ordered a replacement assembly part no. that my friend who works at VW gave me. This was all fitted and now my lights are back up at a good level.

But now my lights don't pop down and up when I turn them on? Is it meant to do this? Does something need to be reset in VCDS at all? or do I now have another issue?

Yes I would get vcds on it to clear the errors in 55 & reset the system, then see what it does.

Mine go down then move outwards coming back in the go back up. I have the cornering lights on my 08 A3 Quattro

the best advice I can give you is to purchase a VCDS cable. I use it frequently and always travel with it
