Hill hold is now standard on all A3s with the s-tronic gearbox.

My mum has it on her 2009 Golf GTI and she says it seems to hold the back for a little while even when she has booted it ffo the lights. Has anyone else found this? Can it be switched off?

It cannot be switched off by any switch in the car. It may be possible using VAG.COM.

I've never found it to be any problem. It fact I was not sure if mine had it fitted until a few weeks ago when I tried it out on a hill start.
