Im looking into making up a bar in the rear of the car to mount the harnesses to.
eventually there will be a cage in the car with a harness bar but for the meantime I need something else.
I was thinking of welding up a sort of rear strut brace from the rear struts of the car, would this work? would it be too far away from the seats?
    Any ideas or pictures?

Yep, that should work. I've got the harnesses in my Cordoba wrapped around the horizontal bar of the cage between the rear turrets.

Presume you are replacing your front seats for proper buckets with harness slots?

Mine are wrapped around the horizontal bar at the rear of the cage. The cage is bolted to plates welded to the suspension turrets.
