Pulling away in 1st gear

Hi, I have recently purchased a 2008 S5 with 42000miles and fsh. I love the car apart from a few niggly little issues.
One in particular is pulling away in 1st, the revs drop slightly then pick up jolting me back and forth and it makes me look like I can't drive!!

I've just read on here that it's built to do this, is that right and can I disable it?

Would a carbon clean help?
