Help With Fault Code 00562 - Oil Level - APY Engine

I'm getting this error stored on the instruments part of VCDS -

00562 -Sensor for Oil Level/Temperature (G266)
30-10 - Open or Short to Plus - Intermittent

The oil warning light comes on after 5 mins or so of driving and then goes off (comes on) every minute or so. There's plenty of oil in the sump, I've checked the connector for the sensor and it seems ok.

I don't know if the car always had this problem as I bought it as a non runner.

Any suggestions? Googled it and there's not a lot come up.
