Healthy chiken nuggets & chips for the kids.

    For the nuggets:-

    1 largefree range (preferably also organic) skinless chicken breast per person

    some organic wholemeal bread

    bit of flour

    2 free range eggs

    sea salt & black pepper.

    Chips, use maris piper potatoes,

    -----------------------------------


    Cut the chicken breasts at an angle across the fillets so you end up with medallions then lightly season,

    tear up the bread & put it in a blender or food processor to make the breadcrumbs, then tip it out on to a large plate,

    put some flour on another large plate & lightly season it and beat the eggs & put them in a bowl.

    pass the chick pieces through the flour then egg then crumb.

    to cook them heat a non stick frying pan with about a tablespoon of olive oil in and fry them over a fairly low to moderate heat for about 5-6 min , gently turning now & then.

    For the chips heat the oven to 220 C, peel & cut the potatoes into fairly chunky chips, then drop them into a pan of boiling salted water for about 4 min (or less if they look like their breaking up) then drain them & drop them back in the saucepan and pour in about 1 and a half tablespoons of olive oil & a pinch of sea salt & gently toss them so they get coated, pour into a roasting tin then roast for about 15 min Gently turning half way.

    serve it all up with some baked beans & you have a perfectly healthy meal the kids will actually love. :yum:

    Try it without the organic/freerange nonsense, tastes just as good and saves you money

    True , they wern't at the time of writing but the best one for the summer season are maris bard, all the decent chippys will be using those till pipers start up again around september, the bard probably won't go crispy but the flavour is to die for.
