Engine – pipes with valves

What are those pipes with valves used for in the engine? There are a few of these valve things with black caps on, when you remove the cap and pierce the ball bearing, air comes out of it.

Thats where the Air Con gas goes. Or if you press the ball bearing like you have its where the Air Con gas escapes!!!!
