I used to do the same journey loads. Where in London are you travelling from?
From east london I used to shoot up the M11 and join the A1.
The A1 is pretty good, especially the parts that are motorway. The dual carriage way parts can be a bit frustrating with the millions of Eddie Stobart lorries performing 30 minute/20 mile overtaking maneuvers, but all in all it's a good journey.

My best time was about 2.5 hours, worst 4.5 hours (there was LOADS of traffic due to roadworks).

Stop off wise - just the usual type places really. There was a stop off which had a massive food hall with lots of choice and seating, can't remember where or what it was called though, I'll have a think about it.
