Whats the best way to convert some of my Itunes files to Mp3 so i can put a decent CD together / Transfer files to my phone etc

Use iTunes itself.

iTunes can generate converted versions of any of its supported formats to any other (eg. AAC to MP3). Obviously, there will be some loss of quality. If you are starting with 128k AAC, then convert to MP3 at 160k or preferably greater.
 
cheers guys, i am using a Windows Pc (vista), and would be greatful for the instructions

i did download a program called tunebite that seems to work, but its only a trial version- and i am not keen on paying cash for the complete program especially if itunes is just as good
 
Are you trying to convert tunes bought from the Itunes music store? I didnt think that Itunes would convert DRM protected music?
