With TTRS Calipers, TTRS stock discs and on 8P2 stock wheels you need a 12mm spacer. With Vagbremtechnic carriers and AP racing discs you could probably get away with an 8mm spacer.
Whats the tyre size? The uniroyals would be my pick out of the ones you mentioned. Are you sure you cant stretch to Goodyear eagle f1's? If you shopped hard you might find them cheap depending on the wheels size. They would outperform the above tyres mentioned in just about every area.
Pagid RS4-2. Amazing pad but they are noisy. What i did was buy a very cheap set of subaru pads just to get the diagonal anti squeal shim and that shut them up for good. Stopping power when warm is fantastic.
Mine did just that... injector started dribbling @ 110k and put a hole through piston number one. Probably worth while people having injectors tested at 100k or replaced - I have heard a few S3's that have died due to injector failure now.
I would suggest that the reason for your bad launches is probably a combination of. Lack of revs and/or not bringing the clutch up on the upswing then releasing the clutch too fast and then bogging down. If you are keen on improving your quarter mile time you would benefit from a uprated clutch...
I don't do this very often for very good reasons (££) and a good launch is much easier with a performance clutch that can take some abuse.

I would put your VIN in there just to be sure. If it is a facelift it will almost certainly have the later Haldex and unfortunately the prop will be a complete part.
One more thing to add to your supension mods is adjustable front ball joints for the front. They are very worth while as they can give an extra 0.5 deg negative camber. Combined with a suspension drop up to -2deg is achievable. The stock camber at the front is roughly -0.5 deg with no adjustment...
