the tdi have a varable vain turbo. bascally it is little flaps in the exshaust section of the turbo. they move to alter the angle of flow on turbine blades to reduce turbo lag
sounds like it could be your MAF senser (airflow) as these is a pretty common fault on the 1.8T engine go up your local audi dealer they will test it for you
