Is the triangular top mount located correctly?
I don't even know if this is possible, but are the lower arms fitted correctly, once pointing upwards, one pointing downwards.
Are the springs sitting in the cups correctly?
Quite a lot of work, all fairly straightforward though. Just make sure you have the right tools to hand before you start.
The upper front control arms and rear springs are the only bits that will give you the biggest headache.
Must be wrong as every other VAG workshop manual I have seen has said the opposite. Just think about it, if the bushes are tightened in the unladen position that are going to be constantly under excess tension when the car is on it's wheels.

All four arms need to be tightened with the weight of the car on them, you will never get access to them on your driveway without a lift. I use a jack and block of wood under the hub to compress into the correct position,

It will take a little time to settle, doubt it's related to the spring as you shouldn't have disturbed that.
Did you tighten the bolts on the bushes with the suspension under compression i.e where the arms would be when the car is on it's wheels?
All Quattro cars do it to a certain degree, does it feel like it is skipping slightly.
Tyres make a difference as does wheel alignment and the condition of the control arms.

The rear is adjustable, via two concentric bolts. This should be set first them the fronts calculated from that..
Regarding the settings used it won't make any difference.
They may have had to drop some of the coolant, depends if they disconnected the EGR cooler (above the turbo) or just moved it out of the way.
The pulsating on the fluid as shown in the video is from the coolant being returned to the header via the hose at the top, usually you wouldn't notice...
I had a loss of power on mine just after it had been mapped, turned out the EGR valve that had failed and was not staying totally shut. Obviously you don't get the engine management lights as this is mapped out. Blanked it off with a metal plate and all was good.

If the DPF and Cat are two seperate bricks within the housing then cutting and welding allows you to remove the DPF brick and leave the cat. The downside is the failure point you have introduced, I guess it depends on how good the person welding the filter back up is.

Pretty common issue with gutted DPF's
Check the seal between the bonnet and bulkhead, and tailgate in case they are worn. Most people just select recirculate when stationary.
The one on mine was the same, one block. Mine is mapped and produces next to no smoke, the only difference is it smells a bit more.
It will be ok for a few days (mine was) just get it mapped out sooner rather than later.
