From what I've seen on the forum, Mr Ess_Three seems to have the most modified S3 on here and therefore, the most experience (?) with different bits of kit. Read all of his excellent test day threads...
Get hold of VAG-COM and measure block 120 in third gear. This will give you a torque figure that should help suss out if its been chipped. Anything around 350+ nm at around 3600rpm would indicate some chipping to me!
