My insurer does new for old car replacement if the car is less than 12 months old.
If you look through some recent posts on here there are several examples of unregistered cars at dealers. Some of these might be closer to the spec you had.

If you don't have GAP insurance check what your policy says about replacement of cars less than a year old.
