could be a couple of issues
check that you dont have any leaks under the car , possibly clutch hydraulic leaks which would give the sensation of a terrible biting point
crunching gears sounds like syncros in gearbox are going
also check the clutch cable where it goes into the gearbox itself...
the car is a 2010 a8 4.2 tdi (cdsb) which has been remapped
has to still be reliable as its a daily driver
is it possible to fit larger turbochargers ??? are there any size restrictions ???
would it need uprated cooling ???

check your oil level and make sure its not overfilled and make sure your using the correct grade of synthetic engine oil

these engines are known to get hot and this over time breaks the oil down quicker leaving less protection for the engine and it making it easier for the oil to come out of the hydraulic tensioners

you need to dissconnect the shaft at the back as its directly driven off the auxillary chain off the back of the engine

there are lots of issues with them which is why its important to research them beforehand and make sure you buy a good one
