Very true, and as you say it only works completely if everyone either uses or doesn’t.
A strange thing regarding your insurance is you should tell your insurance company if you’re changing wheels over to winters and not just swapping tyres.
Why would I be offended, I don’t know you and don’t care if you use winter tyres.
Winter tyres allow a car to stop quicker in the snow/ice, sometimes you can’t compensate for what you can’t see (Black ice) or predict and it is for that reason I like to use them.

You're paying for a better quality car, it's the equivalent of buying Skoda then buying a VW and complaining that your skoda had more standard options!
Having had an A45 I can confirm they are rapid off the line by the once rolling there wouldn't be a massive difference between the S3.
I've driven the new TTRS and it is rapid, however it'd get eaten by the RS6 Performance above 60. I more surprised by the TTRS than the V10 Plus. I guess I knew...
This is why I run a set of Road legal track tyres with good water displacement to get me to and from track and a spare set of dry weather track only tyres.

I would also say Yoko AD08R are good and cheaper but I'd say for ultimate road legal grip the Toyo 888R
If however they don't need to be Road legal look at the likes od DMACKs etc
Spoke to my dealer today as our new S3 Saloon only had them in the front doors which is apparently is all you get, so I asked about the price for replacement Audi ring leds for the rear....£90 lol but they offered 10% off, aye ok I think I'll live without them
