The two demo cars at my dealership have both be respeced as customer models. I believe I got the second one.

I'd assume so! I think that I'll wait for a test drive just in case there's something that I don't end up liking about the car (not likely though!).
That, and because I'll need to scrape together a deposit first and waiting for a demo is a perfect excuse. Haha.

Ordered mine without a test drive, first car I have ever done it with but I did have a go in the 3.0tdi 272 for the weekend and coming from an S3 so a reasonable idea what to expect in terms of build/ standard of finish.

Yes I guess the 3.0TDI will be similar in many ways, but I still couldn't do it myself.
I still want to read member reviews, although preferable from people who have had a test drive, and not people who have bought one (who I don't blame for being biased, but they will be).

I've asked my dealer for a test drive as soon as they have a demo available. Quite intrigued to see how the zf gearbox feels compared to the twin clutch

I couldn't be bothered to go through the hassle of trying to get a test drive (and the follow up from the salesman afterwards) when there really is no chance that I'll buy a B9 (even if it is better than a B8.5, it won't be better enough), which is why I'd like to read member reviews.

I'm trying to convince myself that I have enough power and therefore want to explore the B9 to see how different it feels to mine.

ZF gearbox in our SQ5 with the BiTDi is significantly better in my opinion than the 7 speed in the Q5 or A5 3.0TDI that I've driven

Totally understand your reasoning. I think it comes down to brand loyalty and just your own personal experience/wants/needs.
I ordered my B8.5 S4 without test driving and loved it. Still do. Had an A3 beforehand. Just brand loyalty. Driven BMWs and they're just cold. No soul. Terrible in winter too. I've driven the 3.0TDI B9 like Brasso (is it?) and the chassis just felt so much lighter. Far more forgiving in the corners than my S4. Interior was very different and will have to get used to my new S4 Avant when it comes but the options I've chosen look phenomenal. I'm gonna be that guy sat in the car for hours pressing buttons! Haha. My black edition was a great package but I never got any options. Ordered sport diff with some great tech and panoramic sunroof this time. Hard to see how I won't love the S4 B9.
But your point is very valid. Especially at this cost.
