Thanks all for the suggestions. I went with spraying the sensor with WD40 and giving it a wiggle with a screwdriver. Seems to have the problem sorted for now but with most things like this i'm sure the problem will return at some point.

Mine does the same. Replace both the temp sender and thermostat and it still does it. Had it checked out by a audi specialist garage who tested the speed/milometer and turns out the fuel and temperature gauges are 'sticking'. Basically they are giving you a higher false reading as it should go...
