    If i'm not mistaken, the 210/225bhp 1.8T engines use a 240mm clutch/flywheel. It should be able to cope up to about 285-300bhp ish but it's torque that'll kill it not the bhp.

    S4 (B5) or an A4 3.0 Quattro Sport (B6)

    I hate that 3.0 engine, it's so gutless. It has nothing on the S4s 2.7 but the interior on the B6 is better. I can see your predicament but i'd have to go with the S4. If you can find a nice example with sensible miles on it then, for me, the S4 is the better choice.

    Removing thermostat altogether

    That would suggest either the thermostat is stuck closed but that'd be unlikey as it's been changed before. Or the water pump impeller has failed and isn't pumping the coolant around the engine. I've changed many water pumps that haven't been noisey but the impeller has broken.

    All of those faults are pretty easy to diagnose - there's no need to guessafix it. Jay just needs to find himself a decent mechanic.

    By removing the thermostat, the engine will take longer to warm up, this will in turn cause the engine to use more fuel as it'll be on cold start for longer. I really don't see the point, i'd also be looking for another mechanic to look after my car.
