How easy is it to do and are there any benefits?

It helps improve the amount of air entering your system - the grid takes-up approx. 20% - and yes is quite easy to do. There are a few "how to" docs available here and on the web in general. I've got a "Word doc" saved somewhere that explains this (as well as fitting a cold air feed) that I can post to you if you wish (PM your e:mail if you want it)

I have heard of people experiencing MAF problems shortly after (although bear in mind that many don't) which obviously could be pure coincidence.

The actual sensor is very fragile, and the mesh is the only thing protecting it. I wouldn't recommend removing it.

Depends where you put it - if it's too low down then there could be a problem I'd imagine. Most people tend to relocate the battery so that they can attach it to the front grill.

where do you relocate the battery to? dont know bout you guys with S3's but my a3 tdi hasnt got any room left under the bonnet as it is...

You can either move it further in & back towards the engine (gaining 2 or 3 inches in both directions) by using modified brackets, or go the whole hog and move it to the boot.

Don't forget that most people doing this will have removed the air box for a CAI, an example of one can be seen here in this thread, as well as the picture posted by Rich:
