There are some very decent turbo options available that are designde to go straight in without adaption.
Am not sure exactly what the point is when there's a plethora of decent hybrids available that can flow as much air as the stock engine can handle without producing any extra lag. What more could you want, apart from perhaps a lower price tag?
it depends on your power goals, if you want to go beyound 250hp you should user a GTB2260VK don't be fouled that it's a GT22 it has the 3rd gen vanes so the spool would be more than decent of a 2.0 tdi. For a daily driver i would use a GTB2056VK that at 2000rpm can do 1.3 bars or even better if you wannt to limit to 230-240bhp go for a GTB1756VK and your lag will be almost 0, much better response than the stock turbo that is a 1st generation VNT
LE: you don;t need to change the stock Intercooler that is the same as the GTI has. If you want to be 100% safe you can buy some bosio uprated injectors to protect the cylinder head that is prone to leak coolant.
