Afaik the mobile product will not be a replacement for the full hex-can-usb, some things will not be ported afaik to wireless as they are best used on a wired connection for reliability, so IMHO look at the hex-can-usb product.
Yes you can use on a tablet like that, its windows 7 & is supported, touch screen use is fine but of course comes down to the tablet quality, I've used it on a tablet perfectly ok but I also used one of those touch screen pens for reliability, you can of course change the size of vcds window anyway to make it easier with touch.
