I like to pop the car into S mode then knock the gear selector over to manual, so it stays in manual mode.
In S then manual the car is more responsive, you can tell just be the idling revs between manual from D and manual from S when the car is stopped.
Be interesting to see if the paddle hold returns to D and if you wait if it returns to D or S (depending on what was in use before). But for a bit of play time I knock the gear level over to Manual mode from S, the car is only ever in Dynamic, S/D/M.
