On the centre display under telephone there is the option to view the directory or the call list using the scroll wheel on the steering wheel. By default, the directory is shown, is there a way to change it so the default view is the call list? The same question applies for radio and keeping my DAB memory list as default?

Yea, very good question, I don't believe it is possible to customise any of the settings on the DIS. Any changes would come as part of software upgrade. I would love to change the date to time on the left scroll wheel
Yeah, if it can't be done yet, a software upgrade to be able to customise the DIS would be really handy!
