Is it ok to insure a car in my name, but the car is registered as my wife's car, and she will be covered on the policy too?

They always ask if you are the registered owner, so i would say no, unless the mrs can be the policy holder, worth checking though..
It could be because of paying out, they wont pay you as its not your car?
what about putting it in your business name? we have a few vehicles done that way.....
done that for years, for various reasons, non deliberate we always end up with cars in each others name, they usually take drivers details and ask who the registered keeper is, if its your spouse , i have never had an issue, just tell the truth on who the main driver is
hope this helps

As above, our car is registered in my name, but the insurance policy is in the wifes name, me being a named driver. If the owner of the vehicle is different to the insurance policy holder, as long as its a spouse/partner and is documented as such, its not a problem.
