i own a 1.8 1999 audi 80 cabriolet, i phoned up a local audi dealer in sutton coldfield(birmingham) and got quoted £270 for a service.

It includes changing oil, air filter, oil filter etc except changing the plugs.

I was quoted £330 including changing the plugs which i think is steep.

Do different dealers quote different prices?

Not sure about the UK, but here in South Africa the there is definitely a difference between dealers.
An Audi dealer in Johannesburg's northern suburbs (wealthy area) can charge as much as double what a dealer in the south charges!

So if the same holds true for the UK, shop around.

Personally I see nothing wrong with supplying the parts, just let the stealer charge you for their labour. (just check on their per hour charge and make sure they don't load the price)

I agree with Audi5e there prices can vary from stealer to stealer and to save money you can buy the Oil and air ,oil filter from other source and just tell them to fit it for you .
You could save allot of money there by just doing that

The first link is for oil filter
The second Air filter
The third is for all part that you may require in the future
