140 tdi cabriolet remap advice

Hi there, I have almost come to the conclusion of remapping my car but before I do, I would like to know a few things for definite.

which companies are recommended?
I've had a look at Engine Tuning VW, BMW, Audi and Alfa Romeo - Angel Tuning and they seem to be good.

once I've done the remap is, which car components should I consider changing suco as air filtre etc...? If any, which ones should I go for?

what does stage 1, 2 and 3 mean when it comes to remapping?

audi a4 140 cabriolet tdi 2006 s line

filter can cope with the extra power
stage 1 is just the normal remap
stage 2 remap plus parts decat etc
stage 3 custom map plus parts IE turbo etc

The stage thing is just a marketing term really, Stage 1 i agree with - totally std car, but after that there are so many permutations it's difficult to catogrise them. Where about's are you based?
