Just noticed that when in the car the interior light fades on and fades back down like a dimmer switch when set on the courtesy light position but not when you turn it off on the switch does anyone know why it would be doing this

Because the switch is just a simple switch.
If its on "courtesy" mode then its under the control of the central locking unit, so it can dim it up and down etc.
If you switch it over to permanent on, it bypasses the locking unit and just jams 12v across the bulb, and similarly permanent off simply disconnects the bulb from the circuit, in both of those cases theres no fancy electronics in the loop, hence no dimming.

So it's probably a faulty switch as it will keep dimming up and down all the time when it's in the courtesy position even when you've been driving for over 5 min
