esp pros and cons

i have esp fitted to my 2.8 quattro, and i drive with the esp switched on all the time.

but what are the pros/cons of turning it off, im sure im mising out on some driving fun.

and when should you turn it off? the hand bbok syas when its snowy or loose ground etc. but im sure they are only giving you the safety times
