im looking to an a3, and have spotted a few i like but some dont have the multi functional steering wheels, is it as simple as i think if i was to buy a multi functional flat bottomed wheel and swap over or would the buttons not work?

There are loads of threads on this very subject, but in answer to your question, no they probably wouldnt work.
If you get a flat bottom SW you would also need the airbag as they are a different shape
If the original SW wasnt MF you will probably need a new slip ring, a SW control unit, the loom and coding
Note, to those that are more knownlegable than me, i am happy to be corrected and feel free to add anything that i may have missed out
